In these days that flour is almost impossible to find, I dream about this focaccia I baked couple of weeks ago!

The recipe is once again super easy!
500 g flour
1 tbsp sugar
280g warm water
Rosemary
8g salt
1 sachet dried yeast
Some Olive Oil
-Pour dried yeast in 100g of warm water
- After 10 minutes, the yeast should be foamy and bubbly and expanding
- Add this to the 500g of flour;
- Add the remaining warm water, salt and 4 tsp of Olive Oil
- I used the food processor, but if you do not have one, you can start to knead the dough with your hands
- Cover it with some cling film and leave it for couple of hours to double the volume
- Once this is passed, you can then put the dough on a baking tray previously oiled. Use your fingerprints to expand the dough; wait few minutes in between if the dough doesn’t expand easily.
- Add salt and rosemary and sprinkle some water, and put in the oven for 10 - 15 mins at 250'.
