Hello people - it starts to feel a bit more spring, and I love it!
Over the weekend I made strozzapreti, and they are super easy to make. I thought it would have been more difficult, but it’s not!!
For 4 portions
200 g Flour
200 s Semola di Grano Duro
pinch of salt
200 ml lukewarm water
Method
You can either use a bowl (easier) or straight to the surface.
In a bowl, add the 2 flours, salt and add some of the water, and start to whisk with a fork
Once the water is absorbed, add more water and start using your hands. Either keep using the bowl or do it on a surface.
Keep kneaded the dough till it's smooth
Now cover it up with some cling film and let it rest in the fridge for 30 mins.
After 30 mins, knead the dough again and with a rolling pan, roll it till is roughly 2mm.
Now you can cut it in 1,5cm length
Take one of the strip, and roll it on itself with your hands - like when you wash your hand, rub the strip and the strozzapreti is done!
