Strozzapreti

Hello people - it starts to feel a bit more spring, and I love it!


Over the weekend I made strozzapreti, and they are super easy to make. I thought it would have been more difficult, but it’s not!!


For 4 portions

200 g Flour

200 s Semola di Grano Duro

pinch of salt

200 ml lukewarm water


Method

  • You can either use a bowl (easier) or straight to the surface.

  • In a bowl, add the 2 flours, salt and add some of the water, and start to whisk with a fork

  • Once the water is absorbed, add more water and start using your hands. Either keep using the bowl or do it on a surface.

  • Keep kneaded the dough till it's smooth

  • Now cover it up with some cling film and let it rest in the fridge for 30 mins.

  • After 30 mins, knead the dough again and with a rolling pan, roll it till is roughly 2mm.

  • Now you can cut it in 1,5cm length

  • Take one of the strip, and roll it on itself with your hands - like when you wash your hand, rub the strip and the strozzapreti is done!
