We fancied some burgers, and we had prawns at home, so why not making some prawn burgers?

Ingredients
2 brioche burger buns
Sunflower oil for frying
For the prawn burgers:
200 g raw peeled prawns 🍤
1 spring onion
1/2 egg white 🥚
1 tbsp cornflour
Breadcrumbs
For the slaw
White cabbage (if possible), finely shredded
1/2 lemon juice
1 tbsp mayo
For the chilly mayo
3 tbsp mayo
2 tbsp sriracha chilli sauce
To make the burgers, rinse the prawns in cold water and then dry them.
Put half of the prawns and the spring onion into a food processor, with salt.
When it comes to a rough paste - it's ready.
Add the egg with cornflour, pulse a bit more and then add the rest of the prawns. Pulse again till it's all chopped.
Scoop half of the prawn mixture into your hands and shape into a burger - don't worry the misture should be sticky enough!
Press the burger into the breadcrumbs, then flip over and pack crumbs around the sides. Do this twice for both burgers!
Let's prepare the spicy mayo: add the ingredients in a bowl. Done!
For the slaw, put all the ingredients in a bowl, season and ready!
When you are ready to cook the burgers, head about 3cm oil in a frying pan until it starts to shimmer. Carefully fry the burgers for 4-5 mins each side until golden and crispy!
If you want, you can toast the buns as well.
Assemble the burgers: bun, slaw, burger and on top some mayo. Et voila!
