Polpette - meatballs

Happy Monday people!

Today another Italian recipe for you. I prepared quite a lot of polpette, so I can put them in the freezer and have them ready whenever we fancy them!

Polpette

Ingredients:

- 1kg mince meat

- 3 mozzarelle

- 350 gr / 400 gr of ham

- 3 eggs

- Some Parmesan

- Breadcrumbs

And if you have any leftover cheese, like ricotta or even Emmental!

- Mix all the ingredients in one big bowl (do not put eggs or breadcrumbs yet)

- Once the mix is compact, add the eggs. It should be moist, but still hold its shape.

- With your hands, take a bit of the mixture, and shape it into meatballs, in the size you prefer.

Remember: the smaller (not too small) they are, the quicker it will take to cook them!

- Once you have the size you want, cover it with breadcrumbs, and your first polpetta is ready!

- Keep doing the same till you don't have any more mixture left!

You can then freeze your meatball if you do not want to eat them straight away!

Or you can either cook them in a pan with some oil, or in the oven at 180 degrees.
