Probably we won't have a poke bowl in a while now as it's starting to get cold, so I just wanted to make the last one for a while! They are so easy to make, but so tasty!
Ingredients for 2:

3 Carrots
Half mango
Half cucumber
Pickled ginger - I love ginger, so I tent to use it a lot lol
Half avocado
Edamame beans
Soya Sauce
Spring Onion
Sesame Oil
Sesame Seeds
Honey
Fresh salmon or tuna
Method
Chop the cucumber, mango and carrots
Slice the avocado
Add 1 tbsp of soya sauce to the edamame beans
Prepare the tuna or salmon:
Cut medium size chunks of salmon or tune - which ever you prefer
Place it in a bowl
Add 1 tbsp of sesame oil, spring onion finely chopped, 1/2 tbsp of honey, 1 tbsp of soya sauce and some sesame seeds.
Let it rest in the fridge for 30 mins.
When ready to eat, assemble it as you prefer
Sprinkle some soya sauce on top

You can add some spicy mayo as well if you prefer - just mix 1 tbsp of mayo and 1 tbsp of sriracha sauce!
