Pasta with Courgette, Mozzarella and Tomatoes


This is probably one of my fav!

It's so easy to make and it tastes so good, and so cheesy! And how doesn't like cheesy meals?


Ingredients for 2:

  • 1 mozzarella

  • 2 big courgettes

  • 180 gr rigatoni

  • 300 gr cherry tomatoes

  • 2 garlic cloves (if allergic, you can do without)

  • EVO (Extra-virgin oil)

  • Parmesan

  • If you like it a bit spicy, add half of a dried chilli

  • Salt

Method

  • In a big pan, add some oil, garlic and if you like your pasta a bit spicy, add the half chilli as well;

  • Let it sautéed for couple of minutes - make sure they don't burn;

  • Add the courgettes, that you previously quarter-sliced, and let it cook for about 5 - 10 mins at low heat;

  • Add a bit of salt;

  • Add the cherry tomatoes that you previously sliced in half;

  • Cook the tomatoes and courgettes sauce for another 10 mins.

  • In the meantime, let's take the water to boil - when it boils, add some salt and put the rigatoni inside and let them cook. Depending on the pasta you used, it might take more or less, but make sure you take it out 2 mins before it is cooked.

  • Pour the rigatoni into the sauce pan. Blend all together for a minute. Take it out of the hob, and add the sliced mozzarella. Yes it will melt, and it will be super cheesy!

  • Add some Parmesan as well, and it's ready for you!
