Minestrone di Verdura / Vegetable Soup 🍲

I don't know in your city, but here in London today is raining so much and super cold. So today I am going to make a typical Italian minestrone di verdure 🍲 - in other words, vegetable soup.

And I know the pictures doesn't look great - but trust me, it tastes very good - and especially warm 🔥

You can literally use as many vegetables 🥔🥕🍆🍅 as you wish / have in the fridge!

For mine I used:

Ingredients

  • 2 potatoes

  • Cavolo Nero / Cabbage

  • 2 carrots

  • 1/2 onion

  • 2 stalks of celery

  • 2 stalks of leek

  • 50 gr peas (I used frozen peas)

  • 5 - 6 mushrooms

  • 2 courgettes

  • 1 can of Berlotti Beans

  • 10 - 15 Tomatoes

  • 2l Vegetable Broth

  • Salt

  • Oil

  • Pepper


Method:

  1. Chop all the vegetable - leave the potatoes a bit bigger than the other vegetables.

  2. Add a bit of oil in a pan, and add all the vegetables (apart from the beans)

  3. Low heat, let it cook for just 5 mins.

  4. Add the 2l broth and add some salt. Let it simmer for roughly 30 - 35 mins.

  5. Add the beans the last 5 mins as they are super quick to cook.

  6. Try one of the potatoes, if they are soft, the soup is ready!

  7. You can add some oil on top, or some Parmesan if you'd like!



If you have a kid, and they do not like vegetables too much - we have all been there before - you can add as some 50 - 60 gr of Stelline or other type of small pasta, so you are having more a pasta soup 🍝 🍲 than a vegetable soup 🍅🍆🥕🥔🍲


You can also freeze this up to a month. Simply take it out when you want it in the morning and in the evening just warm it up in a pan again, adding a tiny but of water! And your dinner is served!
