Gnocchi with courgette, pancetta and ricotta!

Ingredients:

  • 200gr Gnocchi

  • 3 courgettes finely chopped

  • 1 pack of pancetta

  • 150 gr ricotta

  • Salt

  • oil

Method:

  • Slice the courgettes, and then cut the circle in 4

  • In a pan, add some oil, and the courgettes and let it cook at low heat for about 15 minutes.

  • In another pan let the pancetta cook

  • Once the pancetta is crispy, pour it into the courgettes mix.

  • Take the ricotta and with a blender make it creamy.

  • In the meantime take the water to boil, add the salt, and then add the gnocchi. It will take more or less 4 minutes, as soon as they float they are ready.

  • Add them into the courgette and pancetta mix. Simmer for couple of minutes with low heat.



  • Take a plate: add the creamy ricotta at the bottom, then the gnocchi.
