Gnocchi

All you need is literally potatoes and flour! And a bit of salt!


- 1kg of potatoes

- 300 gr flour

- Salt

That's it!


Clean the potatoes and put them in boiling water. It will take more or less 20 mins - you will see when they are ready, they are tender all way through.

Drain the potatoes, and mash them with a large fork still in the pan where you previously boiled them. Once ready let them cool slightly, not too much but enough for you to keep the mash in your hands.


When ready, put the mashed potatoes on a surface - I have a marble surface in my kitchen so it helps to cool down the potatoes a bit - and add the flour on it and salt. Stir with your hands, it will take around 10 mins, at first it looks like it won't stick together, but just have faith - it will work! 😊


Once it all sticks together, you are ready to cut them!

You can divide the dough in how many parts you prefer, it has to be easy for you to roll a part and cut it.

Roll a section of the dough into a long, inch-thick snake on a well-floured surface. Cut this thin long into bite size pieces.


Keep doing so till you have finished all the dough.



Once everything is ready, you can cook them in hot boiling water. Remember to add salt to the water. When it boils, put the gnocchi in, they will sink immediately, but soon they will start to float to the surface. That means.... they are ready!! You can now add whatever sauce you prefer, here a few options:

- Ragú sauce

- Gorgonzola and walnuts

- 4 cheese

- Sage and butter

- Pesto

- Tomato sauce



Make sure you do the gnocchi just before you want to cook them - they will become dry very quickly! With these doses, you will make around 6 - 7 portions, so I put the rest in the freezer! When you take them out of the freezer, just take them out and pour them in boiling water, no need to defrost them!
