Cinnamon and Apple Rolls

I found this recipe online and I loved it! Super easy to follow! It's just in Italian, so will translate here for you ☺️


For the dough: 220 g milk 80 g sugar 5 g dried yeast 75 g butter 5 g salt 1 egg 1 yolk 560 g flour


For the sugary cream inside: 100 g soft butter 150 g brown sugar 20 g cornflour 5-10 g cinnamon pinch of sale=t 2 apples


For the icing: 170 g icing sugar 25 g hot water



Method:

  • In a bowl, add the warm milk, yeast and half of the sugar (40g), whisk with a fork til it's smooth.

  • Let is rest for 10 mins, covered with cling film.

  • After 10 mins, add the melted butter (not hot!) salt, the other half of the sugar (40g), the all egg and the yolk. Keep whisky with the fork, till it's smooth.

  • Little by little add the flour, start with mixing with a fork, then knead it with your hands

  • Make a dough, put it in a big bowl greased with oil, cover it with cling film and let it rest and rise for 60 - 90 mins


  • In the meantime, in another bowl add the butter - it needs to be very soft, but not melted. Add the brown sugar, cornflour, cinnamon and sat.

  • Blend all the ingredients with a spatula till they are almost creamy.

  • Peel the apples and cut them into small cubes.

  • Knead the dough till 5-6mm high, in a rectangular shape of 45×30 cm circa.

  • With the spatula, spread the buttery and sugary cream.

  • With a pizza wheel, cut from the longer side 6 stripes (more or less 7 cm each). Then add the apple cubes.

  • Roll the strips on themselves, cut each roll in two with a sharp knife*, placing them on a 20x30cm baking tray, lined with parchment paper, leaving the cut part at the base.

  • Place the swivels side by side, keeping them at the same distance from each other.


Leave all the swivels to rise for about 20-30 minutes, covered with a cloth.

After the rising time, bake in a static oven at 180 ° for about 35 minutes.

Remove from the oven and leave to cool.

In a bowl, prepare the icing by mixing the icing sugar with the very hot water with a whisk.

Add the icing in a sac à poche, or pour it with a spoon to form many small random strips on the surface of the cake. And readyyyy!

*I personally did not cut the strips into two.. so I had 6 massive rolls! They were absolutely amazing!
