As I had a lot of requests for the cecina's recipe, here you go š Ingredients for a tray of 32cm diameter:
130g chickpeas flour
350 ml water
pinch of salt
black pepper
40 ml oil + oil for the tray
Instructions:
Put the chickpeas flour into a bowl, add the water, and whisk it a bit.
There will be some foam on the top, skim as much as possible
Cover it with some cling film and leave it to rest for about 5 - 7 hours
Pre heat the oven at 250' static
Once the 5 - 7 hours have passed, add the 40 ml of oil and salt, and whisk it again
Oil the tray and pour the mixture in. Blend with a spoon
Place the tray in the top part of the oven for about 15-20 mins
Once the 15-20 mins has passed, turn on the grill and leave it there for about other 10 mins!
Sprinkle some black pepper on top, and it's ready for you!

As I love cecina with focaccia, I made that as well on the same day. It was amazing!
