Cecina

As I had a lot of requests for the cecina's recipe, here you go 😍 Ingredients for a tray of 32cm diameter:

  • 130g chickpeas flour

  • 350 ml water

  • pinch of salt

  • black pepper

  • 40 ml oil + oil for the tray

Instructions:

  • Put the chickpeas flour into a bowl, add the water, and whisk it a bit.

  • There will be some foam on the top, skim as much as possible

  • Cover it with some cling film and leave it to rest for about 5 - 7 hours

  • Pre heat the oven at 250' static

  • Once the 5 - 7 hours have passed, add the 40 ml of oil and salt, and whisk it again

  • Oil the tray and pour the mixture in. Blend with a spoon

  • Place the tray in the top part of the oven for about 15-20 mins

  • Once the 15-20 mins has passed, turn on the grill and leave it there for about other 10 mins!


  • Sprinkle some black pepper on top, and it's ready for you!

As I love cecina with focaccia, I made that as well on the same day. It was amazing!
