Black Spaghetti with tomatoes, courgettes and mozzarella sauce

Can't say this picture looks nice, but trust me it tastes way better than it looks!


For two people:


Garlic

Cheery Tomatoes x 10

Mozzarella x 1

Courgette x 1

Black beans spaghetti x 180 gr



- On a pain, put some oil and garlic. When it's ready, add courgettes and tomatoes.

- Leave the flame very low, otherwise you will burn everything super fast!

- Using a wooden spoon, make sure the sauce doesn't burn - leave it to cook for about 15 - 20 mins.

- Meanwhile boil some water, add some salt and cook the black beans spaghetti - it says it takes 2-3 mins, but I think if you leave them a bit longer, they taste better!

- Once the sauce is ready and the spaghetti are cooked, add the spaghetti to the sauce


and let is cook together for another 1 - 2 mins.

- Add the previously chopped mozzarella. Leave it for another 2 mins so the mozzarella started to slightly melt.

It's ready! Add a bit of Parmesan if you'd like!


As I said, the picture doesn't do it justice but trust me, it tastes delicious!
