Aubergine 🍆 Parmigiana

This dish is for everyone, kids will love it as well!


Ingredients:

- 3 Aubergines

- 2 Mozzarella

- Parmesan Cheese

- 2 tins of chopped tomatoes

- Salt

- Garlic

- Olive Oil





You can start with a pan, some oil and some garlic. As soon as the garlic is ready, add the chopped tomatoes and a bit of salt. It will take more of less 30 / 40 mins for the tomato sauce to be ready. Be careful to not overcooked it otherwise it will be too dry and not saucy enough!


Meanwhile you can grill your aubergine. Slice the aubergines - not too thick, but not even too thin otherwise they will burn. I'd say 4 / 5 mm should be good!


Grill the sliced aubergines.


When you are ready with the tomato sauce, and your aubergines are grilled, you can start with the assemblage! 😊


Take an oven dish - I used a small size - put a small layer of tomato sauce at the bottom, then cover it up with a layer of grilled aubergines. Then tomato sauce and some mozzarella! Carry on with aubergine, tomato sauce and mozzarella till you have enough ingredients. You should be able to do 3 / 4 layers depending on the dish you use. The last layer should have in order from the bottom: tomato sauce, aubergines, tomato sauce again, then chopped mozzarella and on top sprinkle with some grated parmesan cheese. In the oven for about 30 / 40 mins at 200°C. And ready for you!!!!
