Cheesecake Charlotte with Berries and Strawberry sauce 🍓⁠⁠⁠⁠

Summer is over - has it ever started in London?! 🤔⁠⁠⁠⁠, why don't prepare this amazing and refreshing cheesecake, just to remind us a bit of that hot sunny weather that we had in London for only a week 🙊⁠⁠⁠⁠?

I used my cheesecake recipe as base, and then I added some berries and a bit of imagination, and voilà ❣ ❣ ❣

I used a 20 cm pan!

- For the base:

400 gr Digestive

128 gr melted butter

- For the filling:

400 ml double cream

1100 gr Philadeplhia

240 gr sugare

- For the strawberries sauce:

300 g strawberries 🍓⁠⁠⁠⁠

100 g caster sugar

80 ml water

- To Assamble:

200 g Savoiardi

200 g blueberries

200 g raspberries

400b strawberries

Ribbon

To make the crumble base:

  1. Crush the biscuit crackers to fine crumbles in a bowl, and then add the melted butter. Just use your ends to mix the two.

  2. Press the buttery crumbs into the base of the cake pan firmly using your hands.

  3. Chill in the fridge for 1 hr to set firmly.

For the filling:

  1. In a food processor, whisk the double cream and the Philadelphia. Add then the sugar.

  2. Spoon the the mixture over the crumb base, level the top of the cheesecake and chill in the fridge until set - 3 hours!

For the strawberry sauce:

  1. Simmer the strawberries, sugar and the vanilla bean in a saucepan with 80 ml of water until the fruit is very soft and the liquid is syrupy.

  2. Pass the mixture through a strainer pressing out all the juice from the strawberries. Set aside to cool.

  3. When the cheesecake is ready to serve, remove it from the pan!

  4. Now, it's easy but it takes a while: Cut a quarter from one end of each savoiardo so that that end is now flat rather than rounded.

  5. Arrange them upright and touching, in a standing ring around the sides of the cheesecake, with the rounded ends uppermost.

  6. The savoiardi should come up at least 3cm above the top of the cheesecake filling; they should create like a wall to contain the fruit.

  7. It's better to put a ribbon all around the cheesecake to hold the Savoiardi.

  8. Now you can arrange the fruit 🍓⁠⁠⁠⁠ on top of the cheesecake!

Aaaand ready to serve ❣

Trust me, it's light and delicious..gnammy!!
